Easy Protein Cookies
One cookie a day keeps the monsters away. Make sure it’s a healthy cookie and it will also keep the dentist away! These cookies are so easy (and fast) to make. But taste só good! For this recipe we went for chocolate cookies, but you can also make them with cinnamon and our Cinnamon Cookies Whey Protein (yum right)?! Now let’s cut the “small talk making” and get to baking!
What you’ll be needing:
-1/2 cup maple syrup
-1 scoop cacao powder
-2 scoops Whey Protein Chocolate Milkshake Powder
-¼ cup of almond flour
-1 can coconut milk
-2 tbsps powdered sugar (store-bought or homemade in the blender)
-2/3 cup of Whey Protein Vanilla Ice Cream

Preheat your oven to 175°C. Now mix your maple syrup, 1 scoop of cacao powder, 2 scoops of and ¼ cup of almond flour. Make sure you keep stirring until a nice dough forms. Don’t worry, were it may seem a little to powdery at first, ones the maple syrup gets really in all teh ingredients things will blend beautifully. Now roll into little balls (approx. 3 to 4 cm). Make sure you roll an even number of balls, because you will need two parts for every cookie. With this amount of dough you can roll 12 to 14 balls easily. Place your balls on the pan covered with parchment paper (not to close to each other) and press them gently with the back of a cup or a simple solid coaster until they are approx. 1 cm thick. Now place the pan into the oven and bake for 8 minutes. After 8 minutes let them cool outside the oven. Scoop out the cream from the can of coconut milk and add 2/3 cup of whey protein vanilla ice cream and whisk till smooth and creamy. Spoon 1 tablespoon of filling onto one half of the cooled down cookies and then placed the other half on top, press down a bit until the filling is covering the whole cookie. Done!
