Easy Crepe Cake

Make no mistake, this beauty is not a cheat day cake. No way Jose, you can have this cake any day of the week! This cake may look like it’s going straight to your hips but it’s actually low on fat and sugar and chuck full of nutrients such as vitamin C, calcium and protein. We reveal the secret to this easy cake below.

What you’ll be needing:

For the crepes:
2 ripened bananas
2 eggs
2 teaspoons of baking powder
Pinch of salt
2 scoops of Vanilla Ice Cream Whey Protein Powder
1 cup of almond flour
For the rest:
1000 g cold Greek yogurt
2 cups of Vanilla Ice Cream Whey Protein Powder
250 g raspberries

Run the ripened bananas, eggs, teaspoons, bakingsode, salt and the Whey Protein Powder through the blender on medium low speed until very well mixed. Heat a nonstick pan to medium high heat. Add the smooth batter in small portions (to create even crepes use the ring from a small spring form). When small holes start to form in your pancake you can carefully flip it and cook the other side. When your done baking let them cool down in the fridge.

Take your greek yoghurt out of the fridge and mix with the Whey Protein Powder. Stir well untill the Whey Protein and yoghurt are well mixed together. Take 1/3 of the mixture and mix with the raspberries. Don’t stir too hard, you don’t want your mixture to become pink, white with little pieces of pink/red popping out!

Now take your chilled pancakes and place one on a plate. Take a scoop of raspberry mixture and place in the middle of the crepe, on top of this place another crepe. Repeat for another good 8 to 9 times. When you place your last crepe make sure to push the whole pile down carefully until all the filling is spread to the edges of every crepe. Now take your 2/3 leftover protein/yogurt mixture and cover your pile generously with the mixture. You can add some flowers or berries for decoration! Let the whole cake chill overnight. This cake is best served chilled, it makes it easier to cut and serve. Enjoy!
