Protein Flapjacks

We love flapjacks! Too bad they are usually packed with tons of sugar. Luckily, team Take-a-whey came up with the perfect solution. We decided to make a flapjack with only natural and healthy ingredients. Think coconut oil, oats, dates and grounded unsalted nuts. For the thick topping we use pure chocolate with 78% of cacao and some sunflower oil. Sounds good right?

Make sure to stack up on the following items:
– Take-A-Whey Whey Protein (we used Cookies & cream)
– 300 g dark Chocolate (at least 75% cacao)
– 200 g oats
– Mixed, unsalted nuts
– 8 large dates

– Coconut butter
-Sunflower oil

Also:
– Brown baking paper
– Rope

– Oven dish

The process is really easy. First melt your coconut butter. Now take a mixer and add the oats, nuts, dates, Whey Protein and melted coconut butter and mix it all together until you get a firm dough. Take the oven dish and make sure the bottom is covered in backing paper with the edges sticking out. This will make it easier to remove the flapjacks when done. Divide the dough evenly over the bottom of the oven dish and press with your knuckles until the entire bottom is covered and your still topping free flapjack is roughly 3 cm thick. Place the oven dish in the fridge and move on to the topping. Break the dark chocolate into little pieces and melt Au bain-marie (Au bain who? Click here). Add a little sunflower oil to make the mixture more fluid. Once everything is melted and blended take your topping less flapjack from the fridge and pour the chocolate over the entire flapjack until the entire flapjack is covered. Now place it back in the fridge and let the chocolate harden for at least 2 to 3 hours. When ready slice them up in bars of approx. 5 by 9 cm. Take some brown baking paper and  cut into little strokes of approx. 4,5 cm and wrap them around the flapjack and tie the whole thing up with a cute piece of rope. Don’t forget the bow on to! Enjoy!
